MDC’s Miami Culinary Institute and the Consulate General of Italy Partner to Offer Masterclass with Chef Paolo Passano

Miami, Nov. 13, 2023 – Miami Dade College’s (MDC) Miami Culinary Institute will collaborate with the Consulate General of Italy in Miami to celebrate “Settimana della cucina italiana nel mondo” (Week of Italian Cuisine in the World), featuring a masterclass for MCI students led by renowned Italian Chef Paolo Passano on Wednesday, Nov. 15. Born in the Liguria region of Italy, Chef Passano’s passion for agriculture took root during his childhood, working in gardens with his grandparents. He also developed a deep love for the restaurant business as he spent his summers in Guayaquil, Ecuador, where his parents used to own three award-winning Italian restaurants under the name Ristorante Riviera. His approach to gastronomy and food preparation translates into extraordinary culinary creations emphasizing Italian food culture in an innovative, inclusive way, and as an ode to his family’s traditions and history. His impressive resume includes working side by side with some of the best-known Italian chefs including Bottura, Cracco and Barbieri, among others. He is an Agri Chef and has a doctorate in gastronomic sciences from the University of Slow Food in Pollenzo, Italy.

Dishes will include Latin-style fish carpaccio with Italian olive oil; tropical maltagliati with meat ragu and cassava gnocchi in American sauce with cheese and tamarillo. MCI students will assist Chef Passano in the creation process, following with a tasting for the participants and audience.
